Cooking Steps

Prep
1
  • Before starting, wash and dry all produce.
  • Peel, then cut carrot into 1/4-inch thick rounds.
  • Cut bok choy into 1/2-inch pieces. Rinse bok choy leaves to wash away any dirt.
  • Juice half the lime. Cut remaining lime into wedges.
Sear chicken
2
  • Heat a large pot over medium.
  • While pot heats, pat chicken dry with paper towels. Season with salt and pepper.
  • When hot, add 1 tbsp (2 tbsp) oil, then chicken. Cook for 2-3 min per side, until golden. Transfer chicken to a plate. (NOTE: Chicken will finish cooking in step 4.)
Start soup
3
  • Reheat pot over medium.
  • Add carrots and 1/4 cup water (use same for 4 servings). Season with salt and pepper. Cook for 2-3 min, stirring often and scraping up any browned bits from the bottom of the pot, until tender-crisp.
  • Add Thai Spice Blend, chicken stock powder, hoisin sauce, rice noodles, 1/8 tsp (1/4 tsp) salt and 5 cups (9 cups) water.
Finish soup
4
  • Add chicken to the pot. Bring to a boil over high. Reduce heat to medium-high. Cover and cook for 10-14 min, stirring occasionally and flipping chicken once, until noodles are tender and chicken is cooked through.**
Finish and serve
5
  • Using tongs, transfer chicken to a plate.
  • To the pot of noodles, add bok choy and lime juice. Cook 1-2 min, stirring often, until bok choy wilts. Season with salt and pepper. (TIP: If you prefer a brothier soup, add more water, 1/4 cup at a time.)
  • Using forks, shred chicken into bite-sized pieces.
  • Divide noodles and soup between bowls.
  • Top with chicken.
  • Sprinkle crispy shallots over top.
  • Squeeze a lime wedge over top, if you like.
