Cooking Steps

Prep
1
  • Before starting, wash and dry all produce.
  • Roughly chop spinach. (TIP: Place spinach in a bowl, then roughly chop using a pair of kitchen shears or scissors!)
  • Peel, then mince or grate garlic.
Cook sausage and veggies
2
  • Heat a large pot over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then mirepoix. Cook for 1 min, stirring occasionally, until starting to soften.
  • Add sausage. Cook for 4-5 min, breaking up sausage into smaller pieces, until no pink remains.** Season with salt and pepper.
Start soup
3
  • Add garlic, crushed tomatoes, Zesty Garlic Blend, stock powder and 3 1/2 cups (7 cups) water. Stir to combine. (NOTE: Scrape any browned bits from the bottom of the pot, this will add flavour!) Season with salt and pepper.
  • Cover and bring to a boil over high.
Cook tortellini
4
  • Once soup comes up to a boil, add tortellini. Cook for 2-4 min, stirring occasionally, until tender but still firm to the bite.
Finish soup
5
  • Reduce heat to medium. Stir in cream and spinach. Cook for 1 min, stirring often, until spinach wilts. Season with salt and pepper.
Finish and serve
6
  • Divide soup between bowls.
  • Sprinkle Parmesan over top.
