Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Thinly slice mushrooms.
  • Roughly chop parsley. 
  • Using a strainer, rinse rice until water runs clear. 
Cook veggies

  • Heat a large pot over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then mushrooms and mirepoix. Cook veggies for 1-2 min, stirring occasionally, until veggies begin to soften.
Cook turkey

  • Add turkey. Cook 4-5 min, breaking up turkey into smaller pieces, until no pink remains.** Season with salt, pepper and Zesty Garlic Blend.
Cook rice

  • Sprinkle Cream Sauce Spice Blend over turkey-veggie mixture. Cook for 1 min, stirring often.
  • Add 3 cups (6 cups water), roasted garlic puree, vegetable stock powder and 1/8 tsp (1/4 tsp) salt. Bring mixture up to a boil.
  • Once boiling, stir in wild rice medley and reduce heat to low. Cover and cook for 20-24 min, until rice is tender. (TIP: While soup is cooking, get a head start on clean up, if you like.)
  • Remove the pot from heat.
Add cream to stew

  • To the pot, off heat, add cream. Season with salt and pepper. 
Finish and serve

  • Divide soup between bowls.
  • Sprinkle parsley over top.
