Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Thinly slice green onion.
Cook mirepoix

  • In a large pot, heat 1/2 tbsp (1 tbsp) oil over medium-high.
  • When the pot is hot, add mirepoix. Cook for 2 min, stirring occasionally, until mirepoix begins to soften.
Cook beef

  • To the same pot, add beef. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Season with salt and pepper.
Simmer chili

  • To the beef and mirepoix, add Chili-Cumin Spice Blend. Cook for 1-2 min, stirring often, until fragrant. 
  • Add crushed tomatoes, chipotle sauce, beans and their liquid and 1/2 cup (1 cup) water. Bring mixture up to a boil.
  • Once boiling, reduce heat to medium, add half the cornmeal (use all for 4 servings) and simmer chili for 5-8 min, stirring often, until chili thickens. Season with salt and pepper. (NOTE: If you prefer a brothier chili, add more water, 1/4 cup at a time. Add a dash of your favourite hot sauce, if you like.)
Finish and serve

  • Divide chili between bowls. Top with sour cream.
  • Sprinkle cheese and green onions over top.
