- Before starting, wash and dry all produce.
- In a large pot, heat 1/2 tbsp (1 tbsp) oil over medium-high.
- When the pot is hot, add beef and onions. Cook for 3-6 min, breaking up beef into smaller pieces, until no pink remains.**
- Add Southwest Spice Blend and Chili-Cumin Spice Blend. Cook for 1 min, stirring often, until fragrant. Season with salt and pepper.
- Meanwhile, thinly slice green onions.
- Peel, then mince or grate garlic.
- To the same pot, add garlic, beans and their liquid, crushed tomatoes, 2 cups (4 cups) water and 1/4 tsp (1/2 tsp) salt. Season with pepper. Bring up to a boil over high.
- Once boiling reduce heat to medium, then add cavatappi. Cook uncovered for 10-15 min, stirring occasionally, until tender. (TIP: Make sure pasta is fully covered by the sauce. If pasta is sticking too much, add more water, 1/4 cup at a time. Scrape up any pieces that are stuck to the bottom of the pot.)
- Divide southwest beef cavatappi between bowls.
- Sprinkle green onions and cheese over top.
