Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Thinly slice mushrooms.
  • Peel, then mince or grate garlic.
  • Peel, then cut onion into 1/2-inch slices.
Cook beef

  • Heat a large pot over medium-high.
  • When the pot is hot, add 1/2 tbsp (1 tbsp) oil, beef, onions and garlic. Season with salt and pepper. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Carefully drain and discard excess fat. 
Cook mushrooms

  • To the pot, add mushrooms and 1 tbsp (2 tbsp) butter. Cook for 5-6 min, until softened. 
  • To a medium bowl (use large bowl for 4 servings), add broth concentrate, cream, Dijon, Worcestershire sauce and 2 1/2 cups (4 1/2 cups) water. Whisk to combine.
Cook pasta

  • To the pot, add fusilli and broth mixture from step 3. Bring to a boil over high.
  • Once boiling, reduce heat to medium.
  • Simmer uncovered for 14-16 min, stirring often to prevent sticking, until fusilli is tender but still firm to the bite. (TIP: If fusilli sticks too much, add more water, 1/4 cup at a time. Scrape up any pieces stuck to the bottom of the pot.)
  • Roughly chop parsley.
Finish and serve

  • To the pot, add cream cheese. Season with pepper, then stir until cheese melts.
  • Divide pasta between bowls.
  • Sprinkle Parmesan and parsley over top.
