Cooking Steps

  • Before starting, preheat the broiler to high. 
    Bring a large pot of salted water to a boil (use same for 4 servings). 
    Wash and dry all produce.
  • Pat tofu thoroughly dry with paper towels, then cut into 3/4-inch cubes.
  • To an unlined baking sheet, add the tofu, 1/2 tbsp (1 tbsp) Italian Seasoning and 1 tbsp (2 tbsp) oil. Season with salt and pepper. 
    Broil in the middle of the oven for 9-11 min, stirring halfway through, until golden.

  • To the boiling water, add penne. Cook for 12-14 min,stirring occasionally, until tender but still firm to the bite.
    Reserve 1/2 cup (1 cups) pasta water.
    Strain penne, then return to the pot, off heat.

  • Meanwhile, peel, then cut half the onion into 1/4-inch pieces (whole onion for 4 servings).
  • Core, then cut pepper into 1/4-inch pieces. 
  • Peel, then mince of grate garlic.

  • Heat a large non-stick pan over medium-high heat. When hot, add 1 tbsp (2 tbsp) oil, then onions and peppers. Cook for 3-4 min, stirring occasionally, until tender. 
  • Add garlic and 1/2 tsp (1 tsp) Italian Seasoning. Cook for 30 sec, stirring often, until fragrant. Season with salt and pepper.

  • Add reserved pasta to the pan, then cream cheese. Whisk, until there are no lumps for 1-2 min. 
  • Add Sun-dried Tomato Pesto. Stir to combine, then remove from heat.

  • Add sauce and tofu to pot with pasta. Stir to combine. 
  • Divide pasta between bowls. 
  • Spinkle over Parmesan cheese.
