Cooking Steps

Bake potatoes

  • Before starting, preheat the oven to 450°F. Wash and dry all produce.
  • Remove any brown spots from potatoes, then halve. 
  • To a large bowl, add potatoes, 1 tbsp (2 tbsp) oil and half the Applewood Smoke Spice. Season with pepper, then toss to coat.
  • On a parchment-lined baking sheet, arrange potatoes, cut-side down.
  • Roast in the middle of the oven for 20-22 min, until tender.
  • When potatoes are tender, carefully remove from the oven. Flip, then arrange in centre of the sheet. Sprinkle cheese over top.
  • Return to the middle of the oven. Bake for 2-3 min, until cheese melts.
Prep chicken

  • Meanwhile, pat chicken dry with paper towels. Season with remaining Applewood Smoke Spice and pepper.
  • Wrap 2 bacon strips around each chicken breast. (TIP: Overlapping strips by 1 inch helps keep bacon on chicken when roasting.)
Cook chicken

  • Line another baking sheet with parchment paper. 
  • To a small bowl, add half the maple syrup.
  • Heat a large non-stick pan over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then bacon-wrapped chicken. Pan-fry for 2-3 min per side, until golden.
  • Transfer chicken to the prepared baking sheet. Brush maple syrup from the small bowl over tops of chicken.
  • Roast chicken in the top of the oven for 17-20 min, until cooked through.**
Make salad

  • Meanwhile, thinly slice green onions.
  • To another large bowl, add vinegar, remaining maple syrup and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then whisk to combine.
  • Add arugula and spinach mix, salad topping mix and half the green onions. Toss to combine just before serving.
Finish and serve

  • Thinly slice chicken.
  • Divide bacon-wrapped chicken, potatoes and salad between plates.
  • Sprinkle remaining green onions over potatoes.
