Cooking Steps

Prep

  • Before starting, bring a medium pot of salted water to a boil over high.
  • Wash and dry all produce.
  • Thinly slice mushrooms.
  • Zest, then juice half the lemon (use whole lemon for 4 servings).
  • Roughly chop spinach.
Cook orzo

  • To the boiling water, add orzo. Cook for 10-12 min, stirring occasionally, until tender but still firm to the bite.
  • Reserve 1/3 cup (1/2 cup) of pasta water.
  • Strain orzo, then return to the pot, off heat. Stir in 1 tbsp (2 tbsp) butter.

  • Heat a large pot over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, mushrooms, onions, and beef. Cook for 5-6 min, stirring occasionally and breaking up beef into smaller pieces, until mushrooms are softened and no pink remains in beef.** Season with salt and pepper.
Finish sauce

  • To the pot with beef and veggies, add Italian Herb Spice Blend. Cook for 30 sec-1 min, tossing to coat, until fragrant. 
  • Add tomato sauce base, reserved pasta water and garlic puree. Cook for 1-2 min, stirring often.
  • Remove from heat. Add the cooked orzo, 1/2 tsp (1 tsp) of lemon zest, 1 tsp (2 tsp) lemon juice and spinach. Stir for 1 min, until wilted.
Finish and serve

  • Divide orzo between bowls.
  • Sprinkle Parmesan over top.
  • Top with chili flakes, if you like.
