Cooking Steps

  • Before starting, preheat the oven to 450°F.
    Wash and dry all produce.
  • Peel, then cut carrot into 1/4-inch coins. 
  • Cut cucumber into 1/4-inch coins. 
  • To a small bowl, add hummus and Red Pepper Pesto. Stir to combine. 
  • To another small bowl, add cranberries, chocolate chips and cashews. Stir to combine. Set aside. 
Toast flatbread

  • On an unlined baking sheet, arrange flatbreads.
  • Toast in the oven of the oven for 2-3 min, until softened. (TIP: You can also go ahead and toast in a toaster!)
  • Allow to cool for 1-2 min, then cut into points.

  • Remove cheddar from packaging and cut into 1/2-inch cubes. Arrange in a triangle on of a large circular platter or board.
  • Arrange salami and chorizo in a slightly overlapping layer on one side of the cheddar. 
  • Halve each piece of prosciutto lengthwise. (TIP: Use kitchen shears to cut directly through prosciutto). Lay proscuitto in a pile on the other side of the cheddar.

  • Place bowl with cranberry-nut mix in the middle of the board, then place the bowl of hummus beside.
  • Place carrots and cucumbers across from the meat on the board.
  • Fill remaining gaps on board with grapes and flatbread points.
