
We've taken all the best parts of a California cobb and put it in panini form! Crispy bacon, creamy guacamole, spicy mayo and plenty of fresh veggies are packed into this toasted sandwich, perfect for a quick meal. Ingredients: Demi baguette (unbleached untreated enriched wheat flour (wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), water, sea salt, yeast, malted barley flour) (barley, wheat) • Bacon (pork, water, salt, sugar, sodium phosphates, sodium erythorbate, sodium nitrite, spices, smoke) • Roma tomatoes • Grade A egg • Guacamole (hass avocado, tomato, onion, sea salt, garlic, cilantro, cilantro essential oil) • Monterey Jack cheese (pasteurized milk, modified milk ingredients, cream, salt, microbial enzymes, bacterial culture, calcium chloride, cellulose, natamycin) (milk) • Spicy mayonnaise (vegetable oil, chili peppers, frozen egg yolk, sugars (sugar, glucose), water, vinegar, salt, garlic, concentrated lemon juice, mustard, xanthan gum, acetic acid, citric acid, caramel, sodium benzoate, potassium sorbate, calcium disodium EDTA) (egg, mustard) • Spinach.

Before starting, preheat the oven to 450ºF. If using, preheat panini press to high. Wash and dry all produce. Arrange bacon on a parchment-lined baking sheet. Bake in the middle of the oven until crispy and cooked through, 10-12 min.** • Meanwhile, halve baguette. Brush tops of each baguette half with 1/2 tbsp oil. • Thinly slice tomato, then season with salt and pepper. • Roughly chop spinach. • Thinly slice eggs, then season with salt and pepper.

Remove bacon from the oven and transfer to a paper-towel lined plate. • Divide spicy mayo between top buns. • Divide spinach between bottom buns, then layer eggs, bacon and tomato slices over top. • Sprinkle with cheese, then close with top buns.

Transfer paninis to another parchment-lined baking sheet. Place another large baking sheet over top of paninis and press down firmly to secure (NOTE: You can place a heavy pot or saucepan on the top baking sheet to help weigh it down.) • Bake in the middle of the oven until golden-brown and cheese has melted, 4-5 min. • Alternatively, place paninis into a sandwich press and close. Grill until golden-brown and cheese has melted, 3-5 min.

Remove paninis from the oven and halve. • Divide panini halves between plates. • Serve guacamole on the side for dipping.
