Before starting, preheat the oven to 450ºF. If using, preheat panini press to high. Wash and dry all produce. Arrange bacon on a parchment-lined baking sheet. Bake in the middle of the oven until crispy and cooked through, 10-12 min.** • Meanwhile, halve baguette. Brush tops of each baguette half with 1/2 tbsp oil. • Thinly slice tomato, then season with salt and pepper. • Roughly chop spinach. • Thinly slice eggs, then season with salt and pepper.

Remove bacon from the oven and transfer to a paper-towel lined plate. • Divide spicy mayo between top buns. • Divide spinach between bottom buns, then layer eggs, bacon and tomato slices over top. • Sprinkle with cheese, then close with top buns.

Place another large baking sheet over top of paninis and press down firmly to secure (NOTE: You can place a heavy pot or saucepan on the top baking sheet to help weigh it down.) • Bake in the middle of the oven until golden-brown and cheese has melted, 4-5 min. • Alternatively, place paninis into a sandwich press and close. Grill until golden-brown and cheese has melted, 3-5 min.

Remove paninis from the oven and halve. • Divide panini halves between plates. • Serve guacamole on the side for dipping.
