- Before starting, preheat the broiler to high.
Wash and dry all produce.
- Halve tomatoes.
- To a small bowl, add 1 tsp oil and 1/4 tsp garlic powder. Stir to combine.
- Halve buns. Arrange buns cut-side up, on an unlined baking sheet. Brush garlic-oil mixture over buns.
- Broil for 1-2 min, until golden. (TIP: Keep an eye on them so they don't burn!)
- To another small bowl, add ricotta, cream cheese and 1/2 tsp garlic powder. Season with salt and pepper, then stir to combine. Set aside.
- To a medium bowl, add tomatoes, 1/2 tbsp oil and balsamic. Set aside.
- Spread ricotta mixture over buns, then divide between plates.
- Using a slotted spoon, top with tomato mixture.
- Add arugula-spinach mix to the bowl with remaining dressing. Season with salt and pepper, then toss to combine.
- Place on top of tomatoes.
