Cooking Steps

Roast potato coins

  • Before starting, preheat the oven to 450°F. Wash and dry all produce
  • Remove any brown spots from potatoes, then cut into 1/4-inch rounds. To a parchment-lined baking sheet, add potatoes and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat.  
  • Roast in the middle of the oven for 22-24 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the middle and the bottom of the oven, rotating sheets halfway through.)

  • Peel, then mince or grate garlic. 
  • Trim green beans. 
  • Peel, then mince shallot. 
  • Core, then cut apple into 1/2-inch pieces.
  • Pat chicken dry with paper towels, then season with Applewood Smoke Spice, salt and pepper. 
Cook chicken

  • Heat a large non-stick pan over medium-high. Add 1 tbsp (2 tbsp) oil.  When hot, add chicken. (NOTE: Don't crowd the pan; cook chicken in 2 batches if needed.)
  • Cook for 1-2 min per side, until golden. Transfer chicken to an unlined baking sheet. Roast in the middle of the oven for 10-12 min, until cooked through.**
Make chutney

  • Meanwhile, heat a small pot over medium heat. When hot add 1 tbsp butter, then the shallots, apples, brown sugar, vinegar and 1 tbsp (2 tbsp) water. 
  • Cook for 5-6 min, stirring often until apples soften. 
Cook green beans

  • Heat a large non-stick pan over medium-high. When hot, add green beans and 1/4 cup (1/2 cup) water. Cook for 4-5 min, stirring occasionally, until water evaporates.
  • Add 1 tbsp (2 tbsp) oil and garlic. Cook for 1 min, stirring often, until garlic is fragrant and green beans are tender-crisp. Season with salt and pepper.
Finish and serve

  • Thinly slice chicken. 
  • Divide the chicken, greens and potato coins between plates. 
  • Spoon chutney over chicken.
