Cooking Steps

  • Before starting, wash and dry all produce.
  • Heat a large non-stick pan over medium.
  • To a medium pot, add 2/3 cup (1 1/3 cups) water. Season with salt, vegetable concentrate and bring to a boil over high.
  • Once boiling, stir in couscous. Remove the pot from heat, then cover and set couscous aside for 5 min to rehydrate. 
  • Add 1 tbsp (2 tbsp) butter and fluff couscous with a fork.

  • Halve cucumber lengthwise. Cut into 1/2-inch moons.
  • Halve tomatoes. 
  • Zest, then juice half the lemon. Cut remaining lemon into wedges.

  • To a large bowl, add cucumber, tomatoes, crumbled feta, 1/2 tbsp (1tbsp) lemon juice, 1 tbsp (2 tbsp) oil, 1/2 tsp (1 tsp) sugar. Season with salt and pepper then toss to combine. 
  • To a small bowl, add half the lemon zest, 1/2 tsp (1 tsp) sugar, 1 tbsp (2 tbsp) water and tahini. Stir to combine.

  • When pan is hot, add 1 tbsp (2 tbsp) oil, then turkey and Mediterranean Spice Blend. Cook for 4-5 min, breaking up turkey into medium sized pieces, until no pink remains.**
  • Add tahini sauce, season with salt and pepper.

  • Add spring mix to the large bowl with cucumbers and tomatoes. Season with salt and pepper, then toss to combine. 
  • Fluff remaining lemon zest into the couscous. Season with salt and pepper.
  • Divide couscous, salad and turkey between bowls. Drizzle yogurt sauce over top.
  • Squeeze a lemon wedge over top, if desired.
