Cooking Steps

Roast potatoes

  • Before starting, preheat the oven to 450˚F. Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut into 1/2-inch wedges.
  • To a parchment-lined baking sheet, add potatoes, half the Zesty Garlic Blend and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat.
  • Roast in the middle of the oven for 25-28 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the middle and bottom of the oven, rotating sheets halfway through.)
Roast broccoli

  • To another parchment-lined baking sheet, add broccoli. Drizzle 1 tbsp (2 tbsp) oil over top of the florets. Season with salt and pepper.  
  • Roast in the top of the oven for 8-10 min, until tender.
  • When broccoli is tender, remove baking sheet from the oven. 
  • Using the bottom of a measuring cup, press each broccoli floret until flat. 
  • Drizzle another 1 tbsp (2 tbsp) oil over top, then sprinkle each floret with Parmesan.  
  • Riast in the top of the oven for 3-5 minutes, until cheese is golden. 
Cook chicken

  • Meanwhile, pat chicken dry with paper towels. Season with salt and remaining Zesty Garlic Blend. 
  • Heat a large non-stick pan over high. 
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then chicken. Cook 4-5 min, stirring often, until golden and cooked through.** 
Mix lemon mayo

  • Zest 1 tsp (2 tsp) lemon zest, then juice half the lemon (whole lemon for 4 servings). Cut any remaining lemon into wedges. 
  • To a small bowl, add lemon juice, lemon zest and mayo. Seasoning with salt and pepper, then stir to combine. 
Finish and serve

  • Divide the chicken, potatoes and broccoli between plates. 
  • Serve the lemon mayo on the side for dipping. 
  • Squeeze a lemon wedge over top of the chicken if you like.
