Before starting, wash and dry all produce. Halve tomatoes. Thinly slice chives. Peel, then cut shallot into 1/4-inch rounds

Add vinegar, chives, 2 tbsp oil and 1/4 tsp sugar to a small bowl. Season with salt and pepper, then whisk to combine.

Add spinach, tuna, tomatoes, carrots and shallots to a medium bowl. Drizzle dressing over top. Season with salt and pepper, to taste, then toss to combine
