Cooking Steps

  • Before starting, wash and dry all produce.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 18-20 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.

  • Meanwhile, cut tomatoes into 1/4-inch pieces.
  • Peel, then cut onion into 1/4-inch pieces.
  • Peel, then mince or grate garlic.
  • Roughly chop cilantro.
  • In a medium bowl, whisk eggs. Season with salt and pepper.

  • Heat a large non-stick pan over medium-high.
  • When hot, add 1 tsp (2 tsp) oil, then onions, cabbage, garlic and tomatoes. Cook for 3-4 min, stirring often, until tender. Season with salt and pepper.
  • Transfer to a plate.

  • Add beef to the same dry pan. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Reserve 1 tbsp (2 tbsp) beef fat in the pan.
  • Add in whisked eggs. Cook for 1-2 min, stirring often, until cooked.** Season with salt and pepper.
  • Remove from heat.

  • When rice is done cooking, reheat the same pan with beef and eggs over medium.
  • Add rice, veggies, soy sauce, half the sesame oil (use all for 4 servings) and 1/8 tsp (1/4 tsp) sugar. Cook for 2-3 min, until sauce thickens and coats rice evenly.
  • Remove from heat, then stir in fish sauce.

  • Divide beef fried rice between bowls.
  • Sprinkle cilantro and peanuts over top.
