Cooking Steps

Cook rice

  • Before starting, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt to a medium pot. Cover and bring to a boil over high.
  • Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear.
    To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat.
  • Set aside, still covered.

  • Core, then cut pepper into 1/4-inch slices.
  • Peel, then cut shallot into 1/4-inch slices.
  • Cut bok choy into 1/2-inch pieces. Rinse bok choy leaves to wash away any dirt.
  • Thinly slice green onions.
  • Strip basil leaves from stems, then thinly slice.
  • Zest, then juice half the lime. Cut remaining lime into wedges.
Cook beef

  • Heat a large non-stick pan over medium-high.
  • When the pan is hot, add beef, shallots and peppers. Cook for 5-6 min, stirring often, until peppers are tender. Season with salt and pepper.
Finish beef

  • To the beef, add bok choy, sweet soy sauce, ginger-garlic puree, chili-garlic sauce and 1/4 cup (1/3 cup) water. Cook for 3-4 min, stirring occasionally, until slightly thickened.**
  • Add basil and half the lime juice. Stir to combine. Season with salt and pepper.
Finish and serve

  • To rice, add lime zest and remaining lime juice, then fluff with a fork. Season with salt and pepper.
  • Divide rice between bowls and top with beef mixture.
  • Sprinkle green onions over top. Serve with a lime wedge.
