Cooking Steps

Sear and roast steak

  • Before starting, preheat the oven to 450°F. Wash and dry all produce.
  • Pat steak dry with paper towels. Season with salt and pepper.
  • Heat a large non-stick pan over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then steaks. Cook for 1-2 min per side, until browned.
  • Remove from heat and transfer steaks to an unlined baking sheet. Roast in the middle of the oven for 5-8 min or until cooked to desired doneness.**
  • When steaks are done, remove from heat and transfer to a plate. Loosely cover with foil and set aside to rest for 2-3 min.
  • Carefully wipe the pan clean.

  • Meanwhile, core, then cut apple into 1/4-inch slices.
  • Halve cucumber lengthwise. Cut into 1/4-inch half-moons.
  • Open one end of the package of croutons. Gently crush croutons with your hands, until they are chunky crumbs.
Make honey-butter crouton crumbs

  • Reheat the same pan (from step 1) over medium. 
  • When the pan is hot, add 2 tbsp (4 tbsp) butter. Swirl the pan to melt.
  • Add crouton crumbs. Toast for 1-2 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn.)
  • Remove the pan from heat, then stir in half the honey. Season with salt and pepper.
Finish salad and serve

  • In a large bowl, whisk in half the chipotle sauce, remaining honey and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper.
  • Add spinach, cucumbers and apples. Toss to coat.
  • Thinly slice steak.
  • Divide salad between bowls. Top with steak, feta and croutons.
  • Drizzle remaining chipotle sauce and any steak resting juices over steak.
