Cooking Steps

Prep

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Core, then cut pepper into 1/4-inch strips. 
  • Halve buns. 
  • Spread garlic spread onto cut-sides of buns. Transfer buns to a foil-lined baking sheet. Set aside. 
Cook beef

  • Heat a large non-stick pan over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then beef and peppers. Cook for 4-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Add pesto. Cook for 1 min, stirring often, until beef and peppers are coated. 
Assemble sandwiches

  • Top cut sides of buns with sausage mixture. Sprinkle cheese over top. 
  • Broil in the middle of the oven for 2-3 min, until cheese is golden and melted. 
Finish and serve

  • To a large bowl, add spinach, croutons and Caesar dressing. Season with salt and pepper, then toss to coat. 
  • Divide open-faced sandwiches and Caesar salad between plates.
