Cooking Steps

Cook rice

  • Before starting, to a medium pot, add 1 1/4 cups (2 1/2 cups) water and garlic salt. Cover and bring to a boil over high. Wash and dry all produce.
  • When the water is almost at a boil, using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.

  • Meanwhile, roughly chop cilantro.
  • Core, then cut pepper into 1/4-inch pieces.
Cook Impossible® Burger Patties

  • Heat a large non-stick pan over medium-high.
  • When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then onions, peppers and Impossible® Burger Patties. Cook for 5-6 min, breaking up patties into smaller pieces, until crispy.**
  • Add Mexican Seasoning and pineapple with its juices. Cook for 1 min, stirring often, until juices are absorbed. Season with salt and pepper.
Finish and serve

  • Fluff rice with a fork, then stir in half the crispy shallots.
  • Divide rice between bowls. Top with Impossible® Burger Patties-pineapple mixture.
  • Drizzle with chipotle sauce.
  • Sprinkle cilantro and remaining crispy shallots over top.
