  • Once boiling, reduce heat to medium-high. Add squash. Simmer, uncovered, until squash is fork-tender, 10-13 min.
  • Once squash is almost finished cooking, add gnocchi. Cook for 3-4 min, stirring occasionally, until tender and pillowy.
  • Strain squash and gnocchi.
  • Rinse under warm water, then return to the large pot.

  • Meanwhile, cut zucchini into 1/4-inch quarter moons.
  • Strip sage leaves from stems. 
  • Heat a large non-stick pan over medium-high heat. 
  • While pan heats, line a plate with paper towels.
  • When the pan is hot, add 1 tbsp (2 tbsp) butter and 1 tbsp (2 tbsp) oil, then sage leaves. Fry until crisp, 1-2 min.
  • Using a tongs, transfer fried sage to the paper towel-lined plate. Set aside.
  • Reserve sage oil in the pan.

  • Reduce heat to medium.
  • Add onions and zucchini to the pan with sage oil. Cook, stirring often, until tender, 3-4 min. Season with salt and pepper. 
  • Add Cream Sauce Spice Blend and garlic puree. Cook, stirring constantly, until onions are coated, 30 sec.

  • Add cream, three-quarters of the goat cheese, cream and 1/2 cup (1 cup) water.
  • Remove the pan from heat. Stir often, until sauce is creamy and slightly thickened, 2-3 min. 
  • Season with salt and pepper.

  • Add sauce to the pot with squash and gnocchi, then stir to combine. 
  • Divide gnocchi between bowls. 
  • Top with remaining goat cheese, then top with crispy sage.
