These super-quick chorizo nachos are ready in just 15 minutes! For this flavour fiesta, crispy tortilla chips are loaded with spicy chorizo and gooey melted cheese, then topped with tangy sour cream and fresh guacamole.

Cooking Steps

Cook beef and beans

  • Before starting, preheat the oven to 450˚F.
  • Wash and dry all produce.
  • Drain, then rinse beans. 
  • Heat a large non-stick pan over medium-high.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then beef and beans. Cook for 5-6 min, breaking up beef into smaller pieces, until no pink remains.**
  •  Add Mexican Seasoning, stirring often for 1 min, until fragrant. Season with salt and pepper.
Assemble nachos

  • Onto a parchment-lined baking sheet, spread tortilla chips out evenly.
  • Top with beef-bean mixture, then cheese.  
Bake nachos

  • Bake nachos in the middle of the oven for 4-5 min, until cheese is golden and melted.

  • Cut tomato into 1/4-inch pieces. 
Finish and serve

  • Divide nachos between plates, then sprinkle tomatoes over top.
  • Dollop guacamole and sour cream over top.
