Toast buns and prep

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Thinly slice half the tomato. Cut remaining tomato half into 1/4-inch pieces. Season with salt and pepper.

  • Spread spicy mustard-mayo on cut sides of buns. Divide filling between buns, then top with sliced tomatoes and some dressed spring mix.
