- Cut cucumber into 1/4-inch rounds.
- Halve tomatoes.
- Thinly slice chives.
- Peel, then cut shallot into 1/4-inch rounds.
- Add vinegar, chives, 2 tbsp oil and 1/4 tsp sugar to a small bowl.
- Season with salt and pepper, then whisk to combine.
- Add spinach, tuna, tomatoes, cucumbers and shallots to a medium bowl.
