  • Before starting, preheat the oven to 425°F. Lightly oil the grill. Preheat the grill to medium (approx. 400°F). Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut into 1/2-inch wedges. To a parchment-lined baking sheet, add potatoes, half the Zesty Garlic Blend and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat. 
  • Roast in the middle of the oven for 25-28 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the middle and top of the oven, rotating sheets halfway through.)

  • Meanwhile, cut four sections off of stone fruit, avoiding the pit. Cut each section into 1/2-inch slices.
  • Peel, then cut half the onion into ½-inch rounds, keeping rings together (use whole onion for 4 servings). Drizzle with 1/2 tbsp (1 tbsp) oil. Season with salt and pepper.
  • Halve buns. 
  • To a medium bowl, add beef, remaining Zesty Garlic Blend, breadcrumbs and 1/4 tsp (1/2 tsp) salt. Season with pepper, then combine. Form mixture into 2 (4) 4-inch-wide patties.
Caramelize stone fruit

  • Heat a large non-stick pan over medium-high.
  • When hot, add 1 tsp (2 tsp) oil, then stone fruit pieces. 
  • Sprinkle with 1/2 tsp (1 tsp) sugar.
  • Cook for 1-2 min per side, until golden. Transfer stone fruit to a plate. Set aside.
Grill patties and onions

  • Add patties to one side of grill. Close lid and grill patties for 5-6 min per side, flipping once, until cooked through.**
  • Add onions to the other side of grill. Close lid and grill for 2-3 min, flipping once, until grill-marked. 
Toast buns

  • When patties are almost done, add buns to the grill, cut-sides down.
  • Close lid and grill buns for 1-2 min, until toasted. (NOTE: Keep an eye on buns so that they don't burn!)
Finish and serve

  • In a small bowl, combine mayo and BBQ sauce.
  • Spread 1 tbsp BBQ mayo on each bottom bun.
  • Top bottom buns with spring mix, patties, caramelized stone fruit, grilled onions and goat cheese. Close with top buns. 
  • Divide burgers and potato wedges between plates. 
  • Serve remaining BBQ mayo alongside for dipping.
