Cooking Steps

Cook sweet potatoes

  • Before starting, preheat the oven to 450°F. Wash and dry all produce.
  • Remove 1 tbsp (2 tbsp) butter from the fridge and set aside to come up to room temperature.
  • Peel, then cut sweet potatoes into 1-inch pieces. To a large pot, add potatoes, 2 tsp salt and enough water to cover (by approx. 1 inch). (Use same for 4 servings.) 
  • Cover and bring to a boil over high. Once boiling, reduce heat to medium-high. Simmer uncovered for 10-12 min, until fork-tender. Drain and return sweet potatoes to the same pot, off heat.
  • Mash 1 tbsp (2 tbsp) butter and 3 tbsp (6 tbsp) milk into potatoes until creamy. Season with salt and pepper.
Prep

  • While potatoes cook, to a small bowl, add half the maple syrup (use all for 4 servings), half the Dijon (use all for 4 servings) and 1 tsp (2 tsp) vinegar. Whisk to combine.
  • Thinly slice chives.
  • Peel, then mince or grate garlic.
  • Cut broccoli into bite-sized pieces.
  • To a small bowl, add the reserved butter and 1 tbsp (2 tbsp) chives. Season with a pinch of salt, then mash with a fork until combined. Set aside.
Cook steaks

  • Pat steaks dry with paper towels. Season with salt and pepper.
  • Heat a large non-stick pan over medium-high. When hot, add 1 tbsp (2 tbsp) oil, then steaks. Cook for 1-2 min per side, until browned.
  • Remove from heat and transfer steaks to an unlined baking sheet. Roast in the middle of the oven for 5-8 min, or until cooked to desired doneness.**
  • When steaks are done, remove from heat and transfer to a plate. Loosely cover with foil and set aside to rest for 2-3 min.
  • Carefully wipe the pan clean.
Cook broccoli

  • Meanwhile, to the same pan over medium, add 1/2 tbsp (1 tbsp) oil, broccoli and 2 tbsp (4 tbsp) water. Season with salt and pepper. Cook for 4-5 min, stirring occasionally, until broccoli is tender-crisp.
  • Add 1 tbsp (2 tbsp) butter and garlic. Cook for 1 min, stirring often, until fragrant.
  • Remove from heat. Add maple-Dijon sauce. Stir until combined. Season with salt and pepper.
Finish and serve

  • Thinly slice steaks.
  • Stir half the remaining chives into mashed potatoes.
  • Divide mash, steaks and broccoli between plates.
  • Dollop herb butter over steaks.
