Cooking Steps

Prep and roast potato wedges

  • Before starting, preheat the oven to 450°F. 
  • Wash and dry all produce.
  • Remove any brown spots from potatoes and cut into 1/2-inch wedges.
  • To a parchment-lined baking sheet, add potatoes and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with half the garlic salt and pepper. Toss to coat.
  • Roast in the middle of the oven for 25-28 min, flipping halfway through, until golden and tender. (NOTE: For 4 servings, roast in the middle and bottom of the oven, rotating sheets halfway through.)
Caramelize onions

  • Heat a large non-stick pan over medium.
  • When hot, add 1 tbsp (2 tbsp) oil, then onions. Cook for 3-4 min, stirring occasionally, until slightly softened.
  • Add vinegar, 1 tsp (2 tsp) sugar and 1/4 cup (1/2 cup) water. Season with salt and pepper. Cover and cook for 5-7 min, stirring occasionally, until liquid is absorbed and onions are dark golden.
  • Transfer onions to a small bowl.
  • Carefully wipe out the pan.
Make patties

  • Meanwhile, peel, then mince or grate garlic.
  • In a medium bowl, combine beef, breadcrumbs, garlic, and half the mustard. Season with remaining garlic salt and pepper. (TIP: If you prefer more tender patties, add an egg to the mixture.)
  • Form mixture into 2 (4) 4-inch-wide patties.
Cook patties

  • Heat the same pan (from step 2) over medium.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then patties. (NOTE: Don't overcrowd the pan; cook patties in 2 batches if needed.)
  • Pan-fry for 4-5 min per side, until cooked through.**
Toast buns

  • Meanwhile, halve buns.
  • On an unlined baking sheet, arrange buns, cut-side up. Sprinkle cheese over bottom buns.
  • Toast in the top of the oven for 2-3 min, until cheese is melted and top buns are golden. (TIP: Keep an eye on them so they don't burn.)
Finish and serve

  • In another small bowl, combine mayo and remaining mustard.
  • Spread mayo-mustard on top buns. Stack spring mix, patties and caramelized onions on bottom buns. Close with top buns.
  • Divide burgers and potato wedges between plates.
