Cooking Steps

Make charred corn

  • Heat a large non-stick pan over medium-high heat. When hot, add 1/2 tbsp oil, then corn. Season with salt and pepper. Cover and cook, stirring occasionally, until deep golden brown, 5-6 min.
  • Remove from heat, then transfer corn to a plate to cool.

  • Reheat the same pan over medium-high. 
  • When the pan is hot, add 1/2 tbsp oil, then pork.
  • Cook, breaking up pork into smaller pieces, until no pink remains, 4-5 min.**
  • Add Mexican seasoning, Tex-Mex paste and 1 tbsp water, then season with salt and pepper. Cook, stirring often, until pork is coated, 1 min.
  • While pork cooks, wrap tortillas in paper towels. Microwave until tortillas are warm and flexible, 1 min. (TIP: You can skip this step if you don't want to warm tortillas!)

  • Meanwhile, add sour cream and chipotle sauce to a small bowl. Season with pepper, then stir to combine.

  • Divide tortillas between plates. Top with pork filling and charred corn.
  • Drizzle chipotle crema over top, then sprinkle with feta cheese.
  • Tear cilantro over top.
