Cooking Steps

Before starting, wash and dry all produce. • Core, then cut pepper into 1/2-inch pieces. • Thinly slice green onion, keeping white and green parts separate.

Heat a large non-stick pan over medium-high heat. When hot add 1/2 tbsp oil, then beef, peppers and green onion whites. • Cook, breaking up beef into smaller pieces, until no pink remains, 4-5 min.** Add Enchilada Spice Blend and cook, stirring often, until fragrant, 1 min. Season with salt and pepper.

Reduce heat to medium, then add salsa and 1/2 tsp sugar to the pan. • Cook, stirring occasionally until salsa is warmed through, 1-2 min. • Meanwhile, wrap tortillas in paper towels. Microwave until tortillas are warm and flexible, 1 min. (TIP: You can skip this step if you don’t want to warm the tortillas!)

Divide tortillas between plates, then top with taco beef mixture. • Sprinkle cheese and remaining green onions over top. • Dollop sour cream over top.
