  • Combine vegetarian oyster sauce, sweet chilli sauce, sesame oil and half the gochujang in a medium bowl.
  • Add linguine to the boiling water. Cook uncovered, stirring occasionally, until tender, 10-12 min. **IS WATER BOWLING HERE??
  • While pasta cooks, heat a large non-stick pan over medium-high heat.
  • When hot, add 1/2 tbsp (1 tbsp) oil, carrots, edamame, and 2 tbsp (4 tbsp) water. Season with salt and pepper.
  • Cook, stirring often until veggies are tender, 5-6 min.
  • Transfer veggies to a plate.
  • Return the same pan to medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then turkey. Cook, breaking up turkey into smaller pieces, until no pink remains, 4-5 min.**
  • Add veggies, soy sauce, ginger-garlic puree and remaining gochujang. Cook, stirring often until fragrant, 1 min.
  • Reserve 1/4 cup (1/2 cup) pasta water, then drain linguine.
  • Add linguine and spinach to pan with meat and veggies. Stir until wilted, 1 min.
  • Season with salt and pepper. (TIP: For a lighter sauce consistency, add reserved pasta water, 1-2 tbsp at a time, if desired.)
  • Divide noodles between bowls.
