Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Core, then cut pepper into 1/4-inch pieces.
Start stew

  • Heat a large pot over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, sausage, mirepoix, peppers and Italian Herb Spice Blend. Season with salt and pepper. Cook for 4-6 min, breaking up sausage into smaller pieces, until no pink remains.**
Finish stew

  • Sprinkle Cream Sauce Spice Blend over top. Stir to coat.
  • Add beans and their liquid, cream, pesto and 3/4 cup (1 1/2 cups) water.
  • Bring to a boil over high, then reduce heat to medium. Cook for 3-5 min, stirring often, until lightly thickened. (TIP: If you prefer a brothier stew, add more water, 1/4 cup at a time.)
Make Parmesan-dressed greens

  • When stew is almost done, to a large bowl, add Parmesan, arugula and spinach mix and 1 tsp (2 tsp) oil. Season with pepper. Toss to coat. (TIP: For extra brightness, add a squeeze of lemon juice!)
Finish and serve

  • Divide stew beween bowls.
  • Top with Parmesan-dressed greens.
  • Sprinkle crispy shallots over top.
