Cooking Steps

Broil chicken

  • Before starting, preheat the broiler to high. Wash and dry all produce.
  • Pat chicken dry with paper towels. 
  • To a foil-lined baking sheet, add chicken and 2 tsp (4 tsp) oil. Season with salt, pepper and half the Za'atar Spice, then toss to coat.
  • Broil in the middle of the oven for 10-12 min, flipping once, until cooked through.**
  • Remove from oven, then transfer chicken to a large bowl. Add broth concentrate, half the fig spread (use all for 4 servings) and half the vinegar. Toss to coat.
Prep and make salad

  • Meanwhile, cut 1 tomato into 1/2-inch half moons (use 2 tomatoes for 4 servings). 
  • Cut cucumbers into 1/4-inch rounds.
  • Peel, then mince or grate garlic.
  • In another large bowl, combine remaining vinegar, 1/4 tsp (1/2 tsp) sugar and 2 tsp (4 tsp) oil. Season with salt and pepper.
  • Add tomatoes, cucumber and spinach, then toss to coat.
Broil flatbreads

  • Brush flatbreads with 1 tsp (2 tsp) oil, then sprinkle with remaining Za'atar Spice. Season with salt and pepper.
  • When chicken is almost done, lay flatbreads over top of chicken and broil together for 1-2 min, until flatbreads are softened. (NOTE: For 4 servings, it's OK if flatbreads overlap a little.)
Finish and serve

  • In a medium bowl, combine hummus and garlic. 
  • Cut flatbreads into quarters.
  • Divide salad and flatbreads between plates. 
  • Spread hummus evenly between plates.
  • Top hummus with chicken.
