Cooking Steps

Cook rice

  • Before starting, wash and dry all produce. 
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water, beef stock powder and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.
Prep and make salad

  • Meanwhile, core, then cut pepper into 1/4-inch pieces.
  • Thinly slice cucumber. 
  • Thinly slice green onions, keeping white and green parts separate.
  • To a medium bowl, add cucumbers, vinegar, half the green onion greens, half the chili-garlic sauce and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper, then toss to coat.
  • Set aside.
Cook tofu

  • Pat tofu dry with paper towels, then crumble into pea-sized pieces.
  • Heat a large non-stick pan over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, tofu and peppers to the pan. Cook for 6-7 min, stirring occasionally, until tofu is browned all over.
Make fried rice

  • To the pan with tofu and peppers, add cooked rice, green onion whites, soy sauce, remaining chili-garlic sauce and 1/2 tbsp (1 tbsp) oil. Stir well to combine, then cook for 3 min over medium-high without stirring. (NOTE: This will help form a golden crust.)
  • Stir well again, then cook for another 2 min without stirring.
Finish and serve

  • Divide fried rice between plates.
  • Sprinkle crispy shallots and remaining green onions over top.
  • Serve cucumber salad alongside.
Cook eggs (optional)

  • In a medium non-stick pan, heat 1 tbsp (2 tbsp) butter over medium-low. Swirl pan until melted.
  • Crack in two (four) eggs. Season with salt and pepper. Pan-fry for 2-3 min, covered, until egg whites are set.** (NOTE: The yolk will still be runny! Also, if preferred, pan-fry eggs using 1 tbsp oil instead of butter.)
  • Top final plates with a fried egg.
