- Peel, then cut sweet potatoes into 1-inch pieces. To a large pot, add potatoes, 2 tsp salt and enough water to cover (by approx. 1 inch) (use same for 4 servings).
- Cover and bring to a boil over high. Once boiling, reduce heat to medium-high. Simmer uncovered 10-12 min, until fork-tender.
- Meanwhile, line a baking sheet with parchement paper. Set aside.
- Cut broccoli into bite-sized pieces.
- To a small bowl, add Galic Spread and maple syrup. Stir to combine. Set aside.
- Pat salmon dry with paper towels. Season with salt and pepper.
- To the prepared baking sheet, add broccoli, 1/2 tbsp (1 tbsp) oil, salt and pepper. Toss to combine.
- Top broccoli with salmon. Dollop over half the Garlic Spread- Maple mixture. Roast in the middle of the oven for 10-12 min, until cooked through.**
- Drain and return potatoes to the same pot, off heat. Mash remainging Garlic Spread-maple mixture into sweet potatoes until creamy. Season with salt and pepper.
- Divide mash, broccoli and salmon between plates.
- Drizzle over any remaining sauce from the baking sheet.
