Before starting, preheat the oven to 475˚F. Wash and dry all produce. Peel, then cut onion into 1/4-inch pieces. Roughly chop spinach.

Heat a large non-stick pan over medium heat. When hot, add 2 tbsp butter (dbl for 4 ppl), then onions and garlic salt. Season with pepper. Cook, stirring often, until onions soften, 2-3 min.

Sprinkle Cream Sauce Spice Blend over onions. Cook, stirring often, until onions are coated, 1-2 min. Stir in spinach, cream and 1 cup water (dbl for 4 ppl). Bring to a boil over medium-high. Once boiling, remove the pan from heat. Season with salt and pepper, to taste. Add cheese and penne. Stir to combine.

Lightly oil an 8x8-inch baking dish (9x13-inch for 4 ppl). Add penne and sauce to the baking dish in an even layer. Sprinkle breadcrumbs over top. Bake in the middle of the oven until breadcrumbs are golden-brown and pasta is cooked through, 10-12 min.

While mac 'n' cheese bakes, halve tomatoes. Whisk together vinegar, 1 tsp sugar and 1 tbsp oil (dbl both for 4 ppl) in a large bowl. Add spring mix and tomatoes. Season with salt and pepper, to taste, then toss to combine.

When mac 'n' cheese is done, let stand to cool, 2-3 min. Divide salad and mac 'n' cheese between plates.
