Cooking Steps

Cook rice

  • Before starting, preheat the broiler to high. Wash and dry all produce.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice and reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.
Prep onion and tahini-yogurt sauce

  • Meanwhile, peel and cut half the onion into 1-inch pieces (use all for 4 servings). (NOTE: If you do not have a food processor to process the meat in step 3, you can use a box grater to grate the onion and mix ingredients in a large bowl instead of blending them together.)
  • In a small bowl, combine tahini sauce, 1 tbsp (2 tbsp) yogurt and 2 tsp (4 tsp) water. Season with salt and pepper. Set aside.
Process beef

  • Using a food processor, blend together beef, onions, beef stock powder, Shawarma Spice Blend, tomato sauce base and remaining yogurt for 2-4 min, until a smooth paste is formed. Season with pepper.
Prep and broil meat mixture

  • Line a baking sheet with foil.
  • Transfer meat mixture in the centre of the foil-lined baking sheet, then using gloved or oiled hands, spread it evenly to 1/4 inch thickness.
  • Broil in the top of the oven for 5 min, then break meat up into large pieces, flip and return to oven for 2-4 min more, until cooked through and crispy.**
Make salad

  • Meanwhile, cut cucumber into 1/4-inch moons.
  • Cut tomato into 1/4-inch pieces.
  • In a large bowl, whisk together half the vinegar (use all for 4 servings), 1/2 tsp (1 tsp) sugar and 1 tbsp (2 tbsp) oil. 
  • Add spring mix, tomato and cucumbers, then toss to coat.
Finish and serve

  • Fluff rice with a fork, then stir in 1 tbsp (2 tbsp) butter.
  • Divide rice and salad between bowls. Top rice with doner. 
  • Drizzle tahini-yogurt sauce over top.
