Cooking Steps

Roast potatoes

  • Before starting, preheat the oven to 450°F.
  • Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut into 1/2-inch cubes.
  • To a parchment-lined baking sheet, add potatoes, Applewood Smoke Spice and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then toss to coat. 
  • Roast in the middle of the oven for 22-25 min, flipping halfway through, until tender and golden.
Prep

  • Meanwhile, cut half the tomato (use all for 4 servings) into 1/4-inch rounds.
  • Roughly chop pickles.
  • In a small bowl, add feta and yogurt sauce. Season with pepper, then stir to combine.
Cook Beyond Meat® patties

  • In a medium bowl, add Beyond Meat®, stock powder, breadcrumbs and 1/4 tsp (1/2 tsp) salt. Season with pepper, then combine.
  • Form mixture into 2 (4) 4-inch-wide patties. (NOTE: Your mixture may look wet; this is normal!)
  • Heat a large non-stick pan over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then patties. Pan-fry for 3-4 min per side, until patties are browned and cooked through.**
Toast buns

  • Meanwhile, halve buns.
  • Arrange buns directly on the top rack of the oven, cut-sides up.
  • Toast for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn!)
Finish and serve

  • Spread dill-feta sauce over top and bottom buns.
  • Stack pickles, patties, tomatoes and spring mix on bottom buns. Close with top buns.
  • Divide Beyond Meat® burgers and potatoes between plates.
