Cooking Steps

Prepare Ingredients

  • Preheat the broiler to high.
  • Wash and dry all produce. 
  • Peel, then cut sweet potatoes into 1-inch pieces.
  • Peel, then mince or grate garlic.
Cook Sweet Potatoes

  • To a large pot, add potatoes, 2 tsp salt and enough water to cover (by approx. 1 inch) (use same for 4 servings).
  • Cover and bring to a boil over high.
  • Once boiling, reduce heat to medium. Uncover and cook for 10-14 min, until fork-tender.
  • Strain and return potatoes to the pot, off heat.
  • Add sour cream, 1/4 tsp (1/2 tsp) salt and 2 tbsp (4 tbsp) butter. Mash until creamy, then season with pepper.

  • While sweet potatoes cook, in a large non-stick pan, heat 1 tbsp (2 tbsp) oil over medium-high.
  • When the pan is hot, add beef and pork, mirepoix and Indian Spice Mix. Season with salt and pepper.
  • Cook for 3-5 min, breaking up meat into smaller pieces, until no pink remains.**
Finish Filling

  • To the pan with beef and pork, add garlic, curry paste and tomato sauce base. Cook for 1-2 min, stirring frequently, until fragrant.
  • Add 1/2 cup (1 cup) water  and beef stock powder.
  • Reduce heat to medium and simmer for 4-5 min, stirring occasionally, until liquid has almost fully evaporated.
  • Stir in peas, then remove the pan from heat.*
Assemble and Cook Shepherd's Pie

  • Grease an 8x8-inch baking dish (9x13-inch for 4 servings).
  • Transfer filling to the prepared baking dish. Spread into an even layer.
  • Top with mashed sweet potatoes, then smooth into an even layer, covering filling.
  • Broil in the middle of the oven for 4-6 min, until potato topping is golden. (TIP: Keep your eye on shepherd's pie so it doesn't burn!)
Finish and Serve

  • Carefully remove pie from the oven, then set aside to cool for a few minutes.
  • Before serving, sprinkle crispy shallots over top.
  • Divide curried shepherd's pie between plates.
