Cooking Steps

Prep

  • Before starting, preheat the oven to 450°F. Wash and dry all produce.
  • Remove any brown spots from potatoes, then quarter. To a parchment-lined baking sheet, add potatoes and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then toss to coat. 
  • Roast in the bottom of the oven for 25-28 min, flipping halfway through, until tender and golden.
Prep beef patties

  • Peel, then mince or grate garlic. 
  • Finely chop cilantro.
  • Line a baking sheet with parchment paper.  
  • To a large bowl, add beef, crispy shallots, half the garlic, half the cilantro, 1/4 tsp (1/2 tsp) salt and 1/8 tsp (1/4 tsp) pepper, then combine.
  • Roll mixture into 4 (8) equal-sized patties.
Bake beef patties

  • On the prepared baking sheet, arrange patties. Roast in the middle of the oven for 10-12 min, until browned and cooked through.**
  • Once cooked through, drizzle over half the ginger sauce. Return to the oven and cook for 1-2 min, until sauce thickens slightly. 
Make dipping sauce

  • Zest, then juice lime. 
  • To a small bowl, add chili-garlic sauce, 1 tsp (2 tsp) lime juice, remaining garlic, remaining ginger sauce, remaining cilantro and 2 tbsp (1/4 cup) water. Whisk to combine. Set aside. 
Toast buns

  • Meanwhile, halve buns. 
  • Arrange buns directly on the top rack of the oven, cut-sides up. Toast for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn!)
  • Meanwhile, to another small bowl, add mayo and lime zest, then stir to combine. (NOTE: This is your lime mayo!)
  • Thinly slice cucumbers lengthwise into long strips.
Finish and serve

  • Spread lime-mayo over buns. 
  • Stack cucumbers, beef patties and spring mix on bottom buns. Close with top buns.
  • Divide sandwiches and roasted potatoes between plates. 
  • Serve dipping sauce on the side.
