Cooking Steps

  • Add 5 cups hot water to a large pot. Cover and bring to a boil over high heat.
  • Add soba noodles to the boiling water. Cook uncovered, stirring occasionally, until tender, 8-9 min.
  • Drain, then rinse under cold water.

  • Juice lime.
  • Core, then cut pepper into 1/4-inch slices.
  • Thinly slice green onion.
  • Roughly chop cilantro.
  • Peel then mince or grate garlic.
  • Whisk soy sauce, peanut butter, 2 tsp sesame oil, 2 tsp lime juice, 1/2 tsp garlic, 1/4 tsp sugar and 2 tsp warm water together in a large bowl.

  • Add noodles, carrots, bell pepper, half the green onion, half the cilantro and half the peanuts to the large bowl.
  • Toss until everything is coated in the sauce.
  • Transfer soba noodle salad to a bowl and sprinkle remaining green onion, peanuts and cilantro overtop.
  • Serve crunchy soba noodle salad.
