Cooking Steps

Prep

  • Before starting, wash and dry all produce. Preheat the oven to 450°F. 
  • Cut tomato into 1/4-inch pieces. 
  • In a small bowl, drain pickle juice. Set aside .
  • Roughly chop pickles. 
  • Peel, then cut onion into 1/4-inch pieces. 
Cook beef

  • In a large non-stick pan, heat 1/2 tbsp (1 tbsp) oil over medium-high.
  • When the pan is hot, add beef and onions. Cook for 4-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Carefully drain and discard excess fat.
  • To the beef mixture, add Applewood Smoke Spice and Worcestershire sauce. Cook for 1 min, stirring often, until fragrant. Season with salt and pepper.
Warm tortillas

  • Meanwhile, wrap tortillas in foil, then place in the top of the oven for 4-5 min, until warm. (TIP: You can skip this step if you don't want to warm the tortillas!)
Make secret sauce

  • To the small bowl with reserved pickle juice, add ketchup, mayo and Dijon. Season with salt and pepper, then stir to combine. 
Finish and serve

  • Divide tortillas between plates. Top with beef mixture, cheese, tomatoes, spring mix, pickles and crispy shallots.
  • Drizzle secret sauce over top.
