Cooking Steps

Cook spinach
1

Before starting, wash and dry all produce. Finely chop half the spinach. Heat a large non-stick pan over medium heat. When hot, add chopped spinach to the dry pan. Cook, stirring often, until wilted. Transfer to a paper towel-lined plate to cool slightly.

Prep
2

While spinach cools slightly, core, then cut pepper into 1/4-inch slices. Halve tomatoes. Zest, then juice half the lemon (whole lemon for 4 ppl). Cut any remaining lemon into wedges. Peel, then mince or grate garlic.

Form patties
3

Add breadcrumbs, cooked spinach, Lemon-Pepper Seasoning, lemon zest, garlic and half the feta to a medium bowl. Add pork, then combine. (TIP: If you prefer firmer patties, add an egg to mixture!) Form mixture into eight 2-inch-wide patties (16 patties for 4 ppl).

Cook patties
4

Reheat the same pan (from step 1) over medium. When hot, add 1/2 tbsp oil, then patties. (NOTE: For 4 ppl, cook patties in 2 batches, using 1/2 tbsp oil per batch.) Pan-fry until cooked through, 3-4 min per side.** Transfer to a plate, then cover to keep warm.

Make salad
5

Meanwhile, add lemon juice and 1 tbsp (2 tbsp) oil to a large bowl. Season with salt and pepper, then whisk to combine. Add tomatoes, peppers, remaining feta and remaining spinach, then toss to combine.

Finish and serve
6

Divide pork patties and lemony tomato-pepper salad between plates.Squeeze a lemon wedge over top, if desired.

Review summary

Updated on Aug 2026
  • Flavour: The pork patties are well-seasoned and flavourful, with feta and lemon zest adding a bright, Greek-inspired character. Some reviewers found the lemon quite forward; reducing the amount slightly can help balance the overall taste.
  • Ease of prep: Most reviewers found this recipe quick and straightforward to pull together on a weeknight.
  • Suggestions: Add an egg to the patty mixture to help them hold together and stay moist during cooking. For the salad, consider stirring a spoonful of mayo or yogurt into the dressing, or using a Greek-style dressing, to add more depth; some reviewers also added olives, cucumber, or romaine for extra variety.
  • Leftovers: Leftover patties keep well and taste great cold, and some reviewers enjoyed them in a sandwich the next day.
  • Sauce: Several reviewers suggested serving the patties with tzatziki or hummus to round out the meal and add a creamy finishing element.
