- Before starting, preheat the oven to 450°F.
Wash and dry all produce.
- Cut potatoes into 1/4-inch-thick rounds. (NOTE: If you don't like potato skins, peel before slicing.)
- Peel, then cut onion into 1/2-inch-thick slices.
- To a parchment-lined baking sheet, add potatoes, onions and 1/2 tbsp (1 tbsp) oil. Season with garlic salt and pepper. Toss to coat.
- Roast in the middle of the oven for 18-22 min, flipping halfway through, until tender and lightly golden.
- Meanwhile, thinly slice mushrooms.
- Trim then halve snow peas.
- Roughly chop spinach. (TIP: Place spinach in a bowl, then roughly chop using a pair of kitchen shears or scissors!)
- Pat chicken dry with paper towels. Season with salt and pepper.
- Heat a large non-stick pan over medium.
When hot, add 1 tbsp (2 tbsp) oil, then chicken. Cook for 8-10 min, turning occasionally, until golden and cooked through.**
- Transfer to a plate.
- Reheat the same pan (from step 3), add 1 tbsp (2 tbsp) butter over medium-high.
- When hot, add mushrooms. Cook for 4-6 min, stirring occasionally, until softened.
- Add miso broth concentrate and Cream Sauce Spice Blend. Stir to coat. Add 3/4 cup (1 1/2 cup) water, snow peas, chicken and any chicken juices from the plate.
- Cook for 1-2 min, stirring often until sauce thickens slightly. Season with salt and pepper.
- Add spinach. Stir until wilted, 1 min.
- Divide chicken mixture and potatoes between plates.
- Spoon remaining mushroom sauce over top of chicken.
