Bone-In Pork Chops with Mushroom Cream Sauce

and Cheddar Mashed Potatoes

Cooking Steps

Cook potatoes

  • Before starting, preheat the oven to 450˚F.
  • Wash and dry all produce.
  • Remove any brown spots from potatoes, then peel and cut into 1-inch pieces.
  • To a large pot, add potatoes, 2 tsp salt and enough water to cover by approx. 1 inch (use same for 4 servings). Cover and bring to a boil over high.
  • Cook for 10-12 min, until fork-tender.
  • Drain and return potatoes to the same pot, off heat.
  • Mash cheese, 2 tbsp (4 tbsp) milk and 2 tbsp (4 tbsp) butter into potatoes until creamy. Season with salt and pepper.

  • Meanwhile, thinly slice mushrooms.
  • Thinly slice chives.
Cook pork

  • Heat a large non-stick pan over medium-high.
  • While the pan heats, pat pork chops dry with paper towels. Season with salt, pepper and half the garlic powder.
  • When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then pork chops. Pan-fry for 1-2 min per side, until golden. 
  • Remove the pan from heat, then transfer pork chops to an unlined baking sheet. Roast in the top of the oven for 8-10 min, until cooked through.**
  • When pork chops are done, transfer to a clean cutting board to rest for 2-3 min.
Cook mushrooms

  • Meanwhile, heat the same pan over medium.
  • When hot, add 1 tbsp (2 tbsp) butter, then swirl the pan until melted.
  • Add mushrooms. Cook for 4-5 min, stirring occasionally, until softened and golden. Season with salt and pepper.
  • Sprinkle Cream Sauce Spice Blend over top. Cook for 30 sec, stirring often, until mushrooms are coated.
Make mushroom cream

  • To the pan with mushrooms, stir in cooking wine. Simmer for 30 sec, stirring often, until wine reduces slightly.
  • Add cream, Dijon, broth concentrate and remaining garlic powder, then bring back to a simmer.
  • Add any pork juices to the pan, then stir to combine. Season with salt and pepper.
Finish and serve

  • To the pot with mashed potatoes, add half the chives, then stir to combine.
  • Divide mashed potatoes and pork chops between plates.
  • Spoon mushroom cream over pork chops.
  • Sprinkle remaining chives over top.
