Cooking Steps

Cook rice

  • Before starting, wash and dry all produce.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high. 
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.

  • Meanwhile, thinly slice cucumber.
  • Thinly slice green onions.
Marinate veggies

  • To a large bowl, add cucumbers, carrots, vinegar, half the Asian Sesame Blend, 1/2 tsp (1 tsp) sugar and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper. Toss to coat.
Cook pulled mushrooms

  • Heat a large non-stick pan over medium-high.
  • While the pan heats, tear or cut pulled mushrooms into 1/2-inch pieces.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil and pulled mushrooms. Cook for 3-5 min, stirring often, until crispy and golden.
  • Remove from heat. Stir in half the ginger sauce (use all for 4 servings) and 2 tbsp (1/4 cup) water. Season with salt and pepper.
Finish and serve

  • Fluff rice with a fork. Stir in half the green onions and remaining Asian Sesame Blend.
  • Divide rice between bowls.
  • Top with pulled mushrroms, marinated veggies and seaweed sheets.
  • Drizzle spicy mayo over top.
  • Sprinkle remaining green onions over top.
