Cooking Steps

Cook rice

  • Before starting, wash and dry all produce.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high. 
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.
Prep cucumbers and turkey

  • Peel, then mince or grate garlic.
  • Thinly slice cucumber into rounds.
  • To a medium bowl, add cucumbers, half the garlic and 1/2 tbsp (1 tbsp) ponzu sauce. Stir to coat.
  • To a large bowl, add turkey, brown sugar, remaining garlic and half the Asian Sesame Blend. Season with salt and pepper, then combine. Set aside.
Make sauce and finish prep

  • In a small bowl, combine sweet chili sauce and remaining ponzu sauce.
  • Thinly slice mushrooms.
Cook veggies

  • Heat a large non-stick pan over medium-high.
  • When hot, add 1 1/2 tbsp (3 tbsp) butter. Swirl pan until butter melts.
  • Add mushrooms, cabbage and carrots. Cook for 4-5 min, stirring often, until tender.
  • Remove from heat. Season with salt and pepper. Stir in remaining Asian Sesame Blend. Transfer to a bowl and cover to keep warm.
  • Wipe out the pan.
Cook turkey

  • Reheat the same pan over high.
  • When hot, add 1 Tbsp (2 Tbsp) oil to the pan, then turkey mixture. Using the back of a spoon or spatula, flatten turkey mixture until 1/2-inch thick. (NOTE: It's okay if mixture breaks apart slightly.) Fry for 3-4 min, without stirring, until lightly crisp and golden.
  • Using a spatula, flip turkey in large sections. Cook for 2-3 min, breaking up turkey into bite-sized pieces, until cooked through.**
  • Remove from heat. Stir in 1 tbsp (2 tbsp) sweet chili-ponzu sauce.
Finish and serve

  • Fluff rice with a fork. Stir in half the crispy shallots.
  • Divide rice between bowls.
  • Top with veggies, turkey and cucumbers.
  • Drizzle remaining sweet chili-ponzu sauce over turkey.
  • Sprinkle remaining crispy shallots over top.
