Cooking Steps

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Heat a large non-stick pan over medium-high heat. 
  • When hot, add Garlic Spread, then swirl the pan to melt. Add couscous, garlic puree, Tomato Sauce Base and onions. Cook for 2 mins, until fragrant.

  • Add half the Harissa Spice Blend. Cook for 30 sec, until fragrant. 
  • Add veggie stock powder and 2 1/2 cups (5 cups) water. Stir to combine. Cover and bring to a boil over high heat. Once boiling, reduce to medium. Simmer for 5-6 min, until couscous is tender and sauce is thickened slightly. Remove from heat, then season with salt and pepper.

  • Meanwhile, drain and rinse shrimp.
  • Arrange shrimp, tomatoes, remaining Harissa Spice Blend and 1 tbsp (2 tbsp) oil on an unlined baking sheet. Season with salt and pepper, then toss to combine. 
  • Broil in the middle of the oven for 5-6 min, until tomatoes blister and shrimp just turn pink.**

  • Once couscous is tender, add spinach. Stir for 1 min, until wilted. Season with salt and pepper, to taste. 
  • Divide couscous  between bowls. 
  • Top with shrimp and tomatoes. 
  • Sprinkle over feta.
