Cooking Steps

Prep

  • Before starting, preheat the oven to 450°F.
  • Bring a large pot of salted water to a boil over high. Wash and dry all produce.
  • Drain, then cut olives in half crosswise.
  • Quarter zucchini, then cut into 1/2-inch pieces.
  • Core, then cut pepper into 1/2-inch pieces.
  • Cut boccocini in half, then pat dry with paper towels.
  • Halve buns.
Cook spaghetti

  • To the boiling water, add spaghetti. Cook for 12-13 min, until tender but still firm to the bite. Reserve 1/2 cup (1 cup) pasta water.
  • Drain spaghetti, then return to the pot, off heat.
Prep meatballs

  • Meanwhile, to a medium bowl, add beef, 1 tbsp (2 tbsp) milk, half the Parmesan, 1/2 tsp (1 tsp) salt and breadcrumbs. Season with pepper, then combine.
  • Roll mixture into 8 (16) meatballs.
  • Into each meatball, press a bocconcini half, leaving some of the cheese exposed in the middle. Press each meatball firmly to secure the cheese. 
  • On a parchment-lined baking sheet, arrange meatballs, cheese-sides up.
Roast meatballs and start sauce

  • Roast meatballs in the middle of the oven for 10 - 12 min or until browned and cooked through.**
  • Remove from oven and carefully press an olive into each boccocini while still warm.
  • Meanwhile, heat a medium pot over medium (use a large pot for 4 servings).
  • When hot, add 1 tbsp (2 tbsp) oil, zucchini and peppers. Cook for 4-5 min, until onions have softened.
  • Reduce heat to medium-low, then add pesto. Cook for 1 min, stirring often, until fragrant.
Finish sauce

  • To the pot, add crushed tomatoes and 1/4 tsp (1/2 tsp) sugar. Simmer for 7-9 min, stirring occasionally, until sauce thickens slightly. Season with salt and pepper.
  • Reserve 1/4 cup (1/2 cup) tomato sauce.
  • Meanwhile, on an unlined baking sheet, arrange buns cut-sides up. Spread garlic spread on buns, then sprinkle mozzarella over top. Toast in the bottom of the oven for 3-4 min, until golden. (TIP: Keep an eye on buns so they don't burn!)
Finish and serve

  • To the pot with spaghetti, add sauce, 2 tbsp (4 tbsp) butter and 1/4 cup (1/2 cup) reserved pasta water. Season with salt and pepper. Toss well to combine.
  • Divide spaghetti between bowls, then sprinkle remaining Parmesan over top.
  • Divide meatballs between bowls and spoon reserved tomato sauce around meatballs.
  • Serve garlic bread on the side.
