Cooking Steps

  • Before starting, preheat the oven to 450°F.
  • Bring a large pot of salted water to a boil over high. Wash and dry all produce.
  • Strain, then cut olives in half.
  • To the boiling water, add spaghetti. Cook for 12-13 min, until tender but still firm to the bite. Reserve 1 cup (2 cups) pasta water.
  • Strain spaghetti, then return to the pot, off heat.

  • Meanwhile, to a medium bowl, add beef and italian breadcrumbs. Season with salt and pepper, then combine. Roll mixture into 8 (16) equal-sized meatballs.
  • In each meatball, press 1 ball of bocconcini into the center, leaving some of the cheese exposes at the edge.

  • To an unlined baking sheet, add broccoli and 1 tbsp (2 tbsp) oil to one side. Season with salt and pepper, then toss to combine.
  • Arrange meatballs on the other side of baking sheet. Roast in the middle of the oven for 10-12 min, until golden and cooked through.**
  • Carefully press 1 olive into each boccocini well still warm.

  • Heat a medium pot over medium.
  • When hot, add 1 tbsp (2 tbsp) oil and onions. Cook for 2-3 min, until onions are softened.
  • Reduce heat to medium, then add tomato sauce base. Cook for 1 min, stirring often until fragnant.
  • Add crushed tomato. Simmer for 7-9 min, stirring occaionally, until sauce thickens slightly. Season with salt and pepper.

  • Halve buns.
  • On another unlined baking sheet, arrange buns cut-side up. Spread garlic spread on buns.
  • Sprinkle half the cheese over buns and 2 olives at top of each bun like eyes. Toast in the bottom of the oven for 3-4 min, until cheese melts. (TIP: Keep an eye on buns so they don't burn!)

  • To the pot with spaghetto, add sauce, 2 tbsp (4 tbsp) butter and reserved pasta water. Season with salt and pepper.
  • Divide spaghetti between bowls and sprinkle remaining mozzarella over top.
  • Divide eye(meat)balls between bowls.
  • Serve broccoli and mummy bread on the side.
